Fresh from our innovative Food and Beverage Department, we bring you two recipes ideal for spring:
Cedar Planked Salmon and Asparagus Noodles
Ingredients for one serving:
5oz. Salmon Fillet
5 Asparagus Spears
1/2 Red Tomato, Julienne
2 fl. oz. Dill Shallot Vinaigrette (see below)
1 fl. oz. olive oil
1/4 tsp. Salt and Pepper
1/16 oz. micro greens
1/2 oz. Butter
1 fl. oz. White Wine
- Season the salmon with salt and pepper and pan sear in the olive oil.
- Place on a soaked cedar plank and finish cooking in a 350 degree oven.
- While the salmon is cooking saute the asparagus noodles in the butter and white wine. Be sure to season to taste.
- To plate, place the asparagus noodles and tomatoes on a warm plate, top with the cooked salmon and drizzle with the dill shallot vinaigrette around the plate.
- Garnish with micro greens. To make the asparagus noodles: Take a potato peeler to the asparagus to create the noodles.
Ingredients for Dill Shallot Vinaigrette:
2 fl.oz. fresh dill
2 minced shallots
1 cup sherry vinegar
2 cups olive oil
1/4 tsp. salt and pepper
1 tsp. chopped garlic
- Chop the dill and shallots and mix with the oil and sherry. This is a broken vinaigrette, season with salt and pepper
Goat Cheese Salad with a Maple Sherry Vinaigrette
Ingredients for one serving:
1 oz. mesclun lettuce
6 black berries
1 oz. chopped cooked bacon
2 oz. crusted goat cheese
2 fl. oz. maple sherry vinaigrette
1/8 radicchio lettuce
1/8 frisee lettuce
2 oz. panko bread crumbs
- Bread goat cheese with a standard breading procedure in panko bread crumbs.
- Drop them in a deep fat fryer and fry until golden brown. About 2-3 minutes. Be careful not to fry too long.
- Toss the greens in the maple sherry vinaigrette and place on a chilled plate.
- Top with fried goat cheese and garnish with crumbled bacon and blackberries.
Ingredients for Maple Sherry Vinaigrette:
1cup. Maple Syrup
2/5 cup Sherry Vinegar
1/4 tsp salt and pepper
1 tsp fresh chopped basil
2 tsp minced onion shallots
1 cup olive oil
- Blend all ingredients in blender except the oil
- Gently add oil until desired consistency
- Season to taste.

And it's going to be big.
Not only is the player lineup loaded with local Texan stars, but the Shootout is offering rare opportunities for both collegiate and highschool players to play alongside the LPGA pros.
On Tuesday, March 12, 2013, the North Texas College Shootout was held at Las Colinas with two spots at the Shootout on the line.
After a beautiful morning on the course, two lead ladies emerged and tied for first and second. Madison Pressel of the University of Texas and Casey Grice of the University of North Carolina snagged the two sponsor's exemption spots with scores of even-par 71.
As if playing on their first LPGA tour wasn't enough, both ladies had a different added bonus.
Madison Pressel, a senior at UT, is the younger sister of LPGA star Morgan Pressel, who is also scheduled to play at the Shootout.
"Being able to play my first round in an LPGA tournament with my sister will be awesome," said Madison.
Casey Grice, although a junior far away at UNC, calls College Station, Texas, home.
"This is a great opportunity for me to play with the pros," said Grice, a junior at UNC. "I'm [a native], so I was excited to see the LPGA return to North Texas."
Chelsea Mocio and Katerina Ruzickova are teammates at Texas A&M and from placing third and fourth have earned the opportunity to play in the LPGA Monday Qualifier on April 22 against a field of professionals competing for two spots in the LPGA tournament proper. Mocio carded a 73 and Ruzickova finished with a 74.
The North Texas LPGA Shootout will be held April 25-28, 2013. The 144-player official money tournament is the Tour’s first in the North Texas region in more than 20 years.

Although the game didn't end favorably for Dallas, Hackberry Creek Country Club in Irving, Texas was able to represent the metroplex during the halftime show at the February 24, 2013 Mavericks game against the Los Angeles Lakers.
Staff members from Hackberry Creek and ClubCorp President and CEO Eric Affeldt were invited out on the court to present a check for $10,545 to Mavericks’ owner Mark Cuban who accepted the donation on behalf of The Dallas Mavericks Foundation.
The donation was made possible by the Club’s 2012 Charity Classic event, which raised more than $35,000 during two sold-out golf events, a tennis tournament, a fun run family day and a silent auction awards dinner featuring Mavericks guard Roddy Beaubois, Mavericks cheerleaders, Mavs Maniaacs, and play-by-play announcer Mark Followill.
The Dallas Mavericks Foundation assists young people through programs stressing the importance of education, good health and other skills crucial to their future success.
Even though ClubCorp Charity Classic season is coming to a close, its’ positive impact continues year-round.
