Dear Members,

In 2010 the Club's Food & Beverage Committee, under the direction of Board of Governors Member Wayne Gildroy, asked club Management to embark upon a mission to locate and acquire some of the world's finest wines and pair them with an equal presentation of food to service the club's wine connoisseurs.

The criteria for the wine selection was simple. The wine must be highly rated and rare.

After spending the last 36 months building an inventory the club is now prepared to offer its first specialty wine dinner.

The wines are of limited availability. In most cases only a few bottles were available. This restricts the seating of this wine dinner.

Pol Roger Brut Reserve NV

The Pol Roger cellars, extending to some 7km, are among the coolest (at 9.5C) and deepest in Epernay, the lowest gallery being some 33 meters underground. Full-flavored yet crisp and delicate. Nicely doughy on the nose with distinctive mature toasty and nutty flavors. Harmonious Brut with lovely balance and a great lingering finish.

Cakebread Dancing Bear '08

Winemaker's notes:

The 2008 Dancing Bear delights the senses with heady, deeply concentrated and wonderfully complex aromas of black plum, crushed boysenberry, ripe olallieberry, fig, earth, baking spices and chocolate. On the dense, weighty palate, the wine delivers intense, mouthfilling, blackberry, black cherry, boysenberry and forest-floor spice flavors supported by supple, chewy tannins and a long, mouth-coating finish enriched by dark chocolate and toasted oak tones. Big and youthful with layers of intensely concentrated flavors, this dramatic mountain red drinks well now, but it will continue to evolve and become complex in bottle over the next decade. alcohol by volume: 15.1%

"The 2008 Cabernet Sauvignon Dancing Bear Ranch, from a vineyard on Howell Mountain, is the darkest and deepest of these offerings from Cakebread. Sweet grilled herbs, flowers, oak and raspberry jam are some of the nuances that emerge from this vivid, textured wine. It possesses striking inner perfume and fabulous balance from start to finish. This is all power and class. In 2008 the final blend includes 5% Cabernet Franc. Anticipated maturity: 2013-2023. "

Winemaker's Notes:

Blend: 94% Cabernet Sauvignon and 6% Cabernet Franc.

Deep, dark inky color signals the wine's intensity. Aromas of wild blueberry contain hints of black olive and spicy vanilla from oak aging. Powerful tannins are chewy and generous, and beautifully balanced by the wine's equally dense flavors of black fruits-blackberry, black cherry, boysenberry and crème de cassis. Vibrant and alive with fresh acidity

"This is a very fine, high level Cabernet that shows the impeccable nature of Mondavi Reserve. Yet it's also very tannic. Shows a vast repository of black currant, blackberry, black cherry and new oak flavors wrapped into a smooth, velvety mouthfeel whose finish goes on forever. Masculine and authoritative, it should continue to improve for many years. Drink now, with decanting, and through 2017, at least."

"Genevieve Jannsens has been working with To Kalon fruit, on and off, since 1978. Her blend for Mondavi Reserve includes several of the oldest dry-farmed blocks in this historic vineyard, some dating to 1945. She sets out to make a wine of elegant power and intensity, and this 2005 is a triumph. It presents cabernet sauvignon as an aristocratic wine, with just enough supple richness to fill out the austere tannins. A hint of green herb and a gloss of cocoa integrated from the new oak add complexity as the profound, earthy flavors open and expand with air. A classic Napa Valley wine to age for ten years or more."

Maryvale Profile '04

Winemaker's Notes:

Profile is our flagship Bordeaux blend showcasing the very best fruit from each vintage. Our favorite lots of Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc are chosen for their concentration, depth of flavor and fine tannin structure to produce a wine that is rich, elegant and opulent. The wine goes through native yeast and malolactic fermentation and is aged in primarily new French Oak barrels for 18 months before being bottled unfiltered.

Blend: 79% Cabernet Sauvignon, 12% Petit Verdot, 7% Merlot and 2% Cabernet Franc.

Aromas of black cherry, cassis and vanilla are interwoven with cedar and cocoa. On the palate the wine is rich and dense with a finish that is long and complex. This wine will age well for a decade and beyond. We recommend decanting the wine in its youth. Our favorite pairings include grilled rib-eye, and herb encrusted rack of lamb.

"Merryvale's Profile remains a star year after year. The '04 is nearly all Cabernet Sauvignon, and stuns with its power.
