Sushi Grade Tuna Coasted with Wasabi & Cilantro Leaves. Topped with
Bean Sprouts, Wrapped with an Egg Roll Browned. Served with a Radish Citrus Dipping Sauce.

Hydroponic Bibb Lettuce~
Topped with Small Dice of Roasted Beets, Green Apples & Red Onion. Drizzled with an Essence of Peach Vinaigrette and Garnished with Lavender.

Second Course
Cioppion Risotto & Diver Scallop~
Fresh Florida Scallop Dusted with a Mixture of Cayenne Pepper & Cinnamon, Pan-Seared. Served Over Risotto with Onions, Tomato, Fennel and Finished with an Anisette Liquor.

Cow and Lamb~
Medallion of Filet Mignon & Medallion of Loin of Lamb Seasoned with Ground Espresso Beans and
Lightly Pan-Seared.
Topped with Olive Tapenade. Served Over a Island of Raspberry Toasted Pignoli Nut Inspired Sweet Potatoes.
