Chef Fernando Robert Mackenzie C.E.C. is a classically trained certified Executive Chef that studied at the California Culinary Academy in San Francisco, the Culinary Institute of America in NYC and in New Orleans as the Executive Chef of Casino Magic for many years. He is an award-winning Chef on both local and national levels. He came to us from our sister property, Shadowridge Country Club, where he and his team was the number one club in the region for Food Quality and Member Satisfaction.
Chef Fernando’s wide range of eclectic styles of cooking includes everything from Classic French, Latin, Mediterranean, Asian, Cajun Creole, Classic American California Cuisine and everything in between, Seafood being his specialty. He has been Executive Chef for some of the largest food operations in the nation including the largest hospital on the West Coast, and several 30 million dollar a year Food and Beverage revenue casino properties. He was the Chef Instructor for Casino Magic’s Food & Beverage University which he helped found and establish that is still in operation today.
Chef Fernando has spent many years as a consultant for bigger Hotel and casino Food and Beverage operations and helped them to become more profitable and successful. Chef Fernando has also served in the role of Food and Beverage Director and Director of operations for a chain of restaurants in San Diego and Orange County that gave him a fresh perspective on the industry. He trains his staff to understand food is a universal language that everyone speaks and that it is the communicating of passion for the craft that really makes the difference in the final product and the way people respond to it.
